Is there anyway to make double-spacing the default spacing for every word
doc?

The easiest way to handle this problem is to create a
template with the desired formatting. In short, here's how
to do it:

1. Create a new blank document.

2. Save it as a template; Word will automatically direct
you to the user templates folder. Accept that choice,
since it enables you to find your new template from the
File>New dialog box.

3. Modify the "Body Text" paragraph style to include
double spacing. Word help can give you the details, which
are different depending on your Word version. Make sure
that this style is applied to the empty paragraph in the
template.

4. Make other changes that you want, say, modify margins,
and customize headers and footers.

5. Finally, save and close the file.

From then on, you can use File>New to create documents
with the desired formatting.
