What is the default location of the Entourage mail and contacts folders within
Finder? This way I can make certain I am backing it up.

I see you are running Tiger, see this tutorial for a Time-Machine-like
backup
Entourage and Time-Machine-like backup (creates chronological backup of
Identity can be used by both Tiger and Leopard allowing you to roll back to
previous dated backups.

For Leopard users following along....
Alternative method to use Entourage and Time Machine (does a once a day or
whatever time period you select) This quits Entourage and the Microsoft
Database daemon allowing for once a day backup into Time Machine.

Backing up Entourage while it is being used can result in a corrupt backup.
The Microsoft Database daemon must also be quit. Both tutorials will quit
Entourage and the Microsoft Database daemon before running the backup.
FolderOrgX only works on an internal drive.
