Where are the datas of Entourage located? E-Mails etc.

They are all inside one database file, which you can find in
~/Documents/Microsoft User Data/Office 2008 Identities/[name of your
identity] (where "~" stands for your user account).

It does, but the backup it creates may not be workable when you need it.
Time Machine backs up the database, but if the database is modified while it
is being backed up (by an incoming e-mail, or simply by modifying a calendar
event or something along these lines), the backup file that is generated may
be unstable. You should therefore exclude this folder from Time Machine and
make sure to create manual backups as frequently as possible.

This is one of the major disadvantages of the monolithic database structure,
and I hope that this is going to change with Outlook for Mac (which is going
to replace Entourage in the next version of Office for Mac).

In Entourage, click on File>Import, Information from another application,
Apple Mail.

Sorry, with this procedure all folders and subfolders are imported, but not the folder: sent messages!

Yes, just start up entourage and select 'Import' from the File menu.
there is an option there to import from Mail.app

Time Machine.

Alternative method to use Entourage and Time Machine (does a once a day or
whatever time period you select) This quits Entourage and the Microsoft
Database daemon allowing for once a day backup into Time Machine.

In this case, you'll need to export the Sent folder in Mail manually. To do
this, open Mail, right-click the Sent folder and choose "Archive Mailbox".
Choose a destination for this folder, and you'll soon find an mbox file in
the specified location. You can simply drag that file into the folder list
in Entourage.

Sure. Import all the folders, then open each folder individually, select all
messages and drag them to a single folder, such as the Sent Items folder
which you can find in the section labelled "On My Computer". You can then
delete the imported folders.
