I received the following note from the developer and it works
great. Try it!

Using Mail PDF with Entourage is straight forward following these steps:
1. Within any document (Word, Excel, Pages etc) choose File > Print...
2. Look for the PDF popup menu at the bottom left of the Print window
3. Choose "Mail PDF with Entourage" and the file will be converted to
PDF format and a new message with the PDF attached will open in
Entourage.

It's an automator action. You can remove it by going to /Library/PDF
Services/ and moving "Mail PDF with Entourage" to the trash.
