Mail Rules with Relative Dates

Is it possible to create a mail rule with a relative date. For example, is
it possible to create a rule to delete all emails from a certain address that
are more than 7 days old?

I am using Outlook 2003 with an exchange server account.

No because rules run on sending or receiving not on a schedule.

In addition to Vince;

You can create a rule that moves the messages to a separate folder and
configure that folder for AutoArchive (to delete messages older than 7
days).
