I cannot install Office Server due to some failed components. How do I
uninstall Manually?

In earlier versions this was a big problem. but try cleaning the program
files , clean the registry out
- HKLM\Software\Microsoft\Office Server
- HLKM\Software\Microsoft\Shared Tools\Web server Extensions\12.0\
and you may have to unistall and re-install IIS and the ASP components.
To be honest I used to just keep a sysprepped image ready and start again

Close - Thought I had it but no go. 
Did a search, deleted services, etc - Tried to run regmon/filemon but
that ended up in disaster blue screening the system
Unfortunately It's not as easy to sysprep this machine :
"Setup is unable to proceed due to the following errors:
The Office Server product cannot be installed with an earlier release
of an Office Server Product Installed"
<sigh>

I feel your pain , went through it many times in the early builds and I
really did end up with the conclusion it was quicker to just start again.
