how does your ISP detect if you're spamming?

is it the amount of emails in the CC and/or BCC fields...or the exact same
messege emailed out a certain number of times?

Spamming is not just "sending out lots of messages", but "sending out
unsolicited bulk commercial emails". If everyone on your list has formally
agreed to receive the emails, you're not spamming. If what you're doing is
legal, and your ISP still objects, you should be able to reason with them so
that you're not blocked.

On the other hand, if you *are* sending out unsolicited commercial bulk
email, what you're doing is illegal and unethical, and hopefully you'll get
caught and stopped!
