Meeting Request Response not recorded in original request.

I'm using Office 2003. I send out a meeting request and the responses
come in and go directly to my deleted items folder unread.
The original meeting request does not get updated with any of the
responses, whether they are decline or accept.
The meeting request is only updated if i open the response.
Under tracking options i have these settings.
Process requests and responses on arrival - on
Process receipts on arrival - on
After processing, move reciepts to Deleted Items - on
Delete blank voting and meeting responses after processing - off
