Menubar in Access 2007

Is it possible to remove the ribbon and quick access bar in 2007 and create
your own menubar as in previous versions of Access

Not really, but you can create your own Ribbon. If you don't want to learn
to do the XML programming, this is a cool tool that can do a lot for you:
