I am using Outlook 2007, since Word is the editor for my e-mail, is there
anyway to clean the metadata from an e-mail, or at least check the
properties/ summary/ security like you can in a Word document?

Any help would be greatly appreciated.

Emails are always sent either in plain text or HTML formats. They aren't
Word documents, and they don't have such properties/summary attributes.
