Each time I attempt to minimize Outlook it automatically closes it rather
than minimizing. Anyone else have this problem

No it doesn't. Right-click the Outlook icon in the system tray at the right
end of the Taskbar and uncheck "Hide When Minimized".

.... Or simply learn that the icon in the systray means Outlook is minimized
and still running
