Modifying Custom Outline Codes

Our Custom Outlines Codes include fields which ask the project manager to
specify whether or not a particular project falls under a specific company
branch, to select from a cost code dropdown menu etc...before saving the
project to project server.

I've know been asked to remove and modify these codes and I'm uncertain what
the impacts may be. i.e If I want to delete, remove or modify certain codes
what impact would this have on all other projects? How do I go about this?

This would impact the custom outline code values of the existing projects.
Unless published again, all the current projects will hold the existing or
old values

Is there a simple way to republish all projects once changes have been made?
I'm managing approx a hundred.
