When pointing the mouse, say, on a menu item, how can I get FP to change
content elsewhere on the page.

What kind of content do you want to change? An image? Use the swap image
behavior. Text content? You would have to show a previously hidden page
element, like a layer, that contains the new content, and hide the one that
contains the original content.

All of these can be triggered from that single mouseover event.

I don't understand this question. Are you asking how do you apply the
behavior? Or are you asking how do you change it?

OK - I've worked out how to change an image using behaviors - but how can I
change an image somehere else on the page? All I can do is change the
existing image to another in the same place.

PS: Does changing text work in the same way?

No. That would require using either a) dynamic writes to the page with
custom javascript, or b) showing and hiding hidden page elements containing
the alternate texts. You can investigate option (b) using layers - but
before you do, you should read this page (it's a draft in progress - I
really want to bring the level down and use more examples, but it'll get you
started) -

That's it! Except... I can't get the "other" image to change... when I do
it, the image that I mouseover changes and not the one at the opposite end.
Excuse the complete dumbness on my part :)
