Forget Alt-ESV, and forget assigning a macro for pasting values.
Right-click anywhere on the Menu Bar (or right-click an unused space
on a toolbar, or select menu Tools), pick Customize..., activate the
Commands tab, choose category Edit, scroll to Paste Values. Drag
Paste Values to the right of the last menu item in the Menu Bar and
drop it there. You'll have an icon probably. Right-click it and
select either 'Text Only' or 'Image and Text' to reveal the shortcut:
