What's the release date?
Can I jump from 2K3 to 2K10? or must I get on the 2K7 platform first?

The release date with by H1 next year. There is a migration path, but in
essence you must be on 2k7 1st.

Migration is a complicated story.
If I were using 2003, I'd take it as an opportunity to clean up
configuration, procedures and everything else and start fresh.
Migration from 2003 to 2007 is difficult and messy, so I can't imagine that
the jump to 2010 would be any better.

Dragon:

Keep in mind that the migration path is not yet completely defined and
subject to change, but I believe that, at this time, Microsoft is investing
in tools and resources to help 2003 users make the move to 2010 in a
relatively seamless way. Technically, this means converting the 2003 data to
the 2007 format first, however it doesn't necessarily mean that it will be
an exceptionally difficult process. Microsoft has made vast improvements in
the overall installation experience for 2010 and we should see some of that
carrying through to the migration story as well.

Jack:

It's the 2007 to 2010 part that has the happy story, indeed. Apparently, you
should be able to point your new 2010 at your 2007 databases and the system
will recognize the fact that the data is in 2007 format and then proceed to
upgrade it to 2010 format. Of course, this is not something that works in
the current beta, and subject to change.

I just attended Project Conference 2009 and they conducted a hands-on lab
walking youn through a PS2003 to PS2010 migration. Microsoft has a tool in
the form of a VM that walked you completely through the process and showed
you a very informative log of the results. The lab took 30 minutes to walk
you completely through the conversion of a server with 4 projects.

Yes, and let's hope this makes it into the production release as it promises
to make the migration much easier. Even still, I often find the availability
of the tool is not enough to justify its use when all you would be doing is
migrating garbage into your new system, more to Jack's point.
