We have Exchange 2003 on the server and Outlook 2000 on
the clients. I have one user, one mailbox, with 3
addresses- addr1, addr2, addr3. He wants to receive mail
into three different folders, one for each email address.
Example: mail addressed to addr1 automatically goes to
folder1, mail addressed to addr2 automatically goes to
folder2, mail addressed to addr3 goes to folder3.

Include your Outlook version.
Are you talking about messages you are sending or receiving? Do you really
mean email addresses or email accounts?
