Multiple page visio document

Does the Visio Drawing Control allow for creating a flow chart that is
larger than one page or is it limited to one page?

Positive. I can insert pages and make basic flowcharts in my program.

Can this be viewed all on the same screen with a scroll bar, or are
they stacked on top of one another?

You always have an option of changing the page size. So, when needed do
change the page size to fit your diagram(s)
