Need more shape options

How can I add to the Shapes gallery? There are arrows and call boxes, etc.
but I would like more shapes - how/where can I get them and how do you add
them to the gallery?

This depends somewhat on what version of Word you're using. If it's Word
2003 or earlier, do you see More AutoShapes at the bottom of the menu? This
opens the Clip Art task pane, and you may close it quickly before you
realize that its contents actually do include some useful shapes. They'll be
inserted with fill and shadow that you may not want/need, but that's easy
enough to remedy.

Word 2007 doesn't have this option in the Shapes gallery, but it you click
on Clip Art instead and search for "shapes," you'll get a similar
collection.
