Nested Loops - If function

I need to do an if function with 12 nestled loops - one for each month.
I know you can only do 7. But, I remember someone showing me how to do
7 and then add another with 5 more. It was something like
IF(.....)+If(...)

Most nested 7+ IF problems are more often than not lookup problems for which
VLOOKUP, LOOKUP, etc. are better suited.
