New PDFs don't appear in Recent Documents

When I create a new PDF in Adobe Acrobat, it does not appear in "recent
documents", such as when I want to attach it to an email. It does appear in
the list when I do Start:Documents. Is there any way to fix this?

Simplest thing might be to create a folder for PDFs, always save them to that
folder, then put a shortcut to the folder on the desktop or in any other
location that's easy to get to when you go to attach a file to email.
