New Task Folders Don't Allow Assignment of Tasks?

I have created a new task folder, called MyTasks and
whenever I try to assign a task to someone, Outlook seems
to want it to be in the default "Tasks" folder, or it
won't update when the asssigned task changes. Is this a
limitation?

Yes - that's the way it works. Why do you need another tasks folder? You
might want to look into using categories - then you can have everything in
one folder & set up filtered views if you like.
