No "recent document list" available

Access 2007 SP1. XP SP3 Standalone machine. "Show this number of
recent documents" is greyed out.

Click on Office Button, Access Options (at bottom near right side), Advanced,
scroll halh way down to Display, set the "Set this number of recent
documents:" to the value you desire.
