You only have backups if you actually do backups. Do you run periodic
backup jobs on your host to allow recovering lost files? Otherwise, go
look in the Recycle Bin.

Only if you created a backup yourself.
You might want to check your Deleted Items folder as well or, if you have it
enabled, your archive folder.
Either way; they don't delete them by themselves.

Which notes are you talking about - the Notes folder or notes that are
attached to Contact items and such? What version of Outlook are you
using?
