Can documents created in Office 2007 be read and edited in their Office 2003
counterpart? Thank you.

As long as you save them to be compatible with 2003 or lower and I belive
there is a file for those that have 2003 that can be downloaded which will
allow them to open files created in the new 2007 format.

You can save them in a 97-2003 file format, and users with earlier versions
will be able to open and edit (well, mostly edit) them.

Or you can have users with earlier versions of Office install the
compatibility pack, which allows them to open the new file formats (PPTX,
XLSX, DOCX, etc.)

Note that you must install all high priority Windows updates, and you must
also make sure you have the latest service pack for Office. For the Office
updates, go here http://office.microsoft.com/en-us/downloads/default.aspx
and click the link *beneath* the big fat yellow button that says "get
microsoft updates." (You want to click the text that says "get additional
office updates.")

If you create something in Excel 2007 and save it as Excel 2003. Can you
then continue editing in 2007, then email it to someone with 2003. And can
the 2003 user then edit it further? Is anything changed in format when the
2003 user tries to use the Excel spreadsheet?

This only works if you don't exceed the spreadsheet size set by 2003. If
you use a larger 2007 spreadsheet size, you won't be able to save it in
the 2003 format.
Charts might not look the same and depending on what you did to them in
2007, they might be just pictures when opened in 2003. Other type of
drawing objects & SmartArts you insert will probably be shown as
pictures in 2003, but be fully editable of course in 2007. Besides those
potential limitations (which you'll be warned off when saving in Excel
2007 in the 2003 format), you can go back and forth between the versions
with the same 2003 file.
