Office 2007 spec calls for it to run on the Windows XP product Family (with XP Service Packs in place), Windows 2003 server and
Windows Vista.

It works, but I don't think my McAfee anti virus is working with it. Any
suggestions on which anti virus program might work with Office 2007 Outlook?

I'd suspect that AV programs will be updated closer to release. Remember
it is still in beta.
Having said that, you don't need the AV Outlook integration. It's
redundant and doesn't offer you any additional protection. Your normal
AV scanner and Outlook security protects you already sufficiently.

You say that there is an anti-virus system, other than McAfee operating
within Outlook? Or just that the total scanning capabilities of McAfee with
be enough. I am not so concerned with the global scanning, as it still does
work, but the attachment are not being scanned. I contacted McAfee, and they
say it's a Microsift problem. I'll reload Office and let you know what
happens.

It looks like Outlook 2007 reloaded Outlook 2003's profile and McAfee might
be still interfaced with 2003.

I am saying that the regular McAfee online virus scanner that scans
files on your system as you access them is sufficient in combination
with Outlook's security feature (which prevent the execution of
malicious code within Outlook e.g.).
