I need to do some testing on some documents and I want to know if it is
possible to have multiple installations of MS Office. I would like to have
office 2007 and either office 2003 or Office 2000 on the same computer. Can
this be done?

Yes - but only one version of Outlook

How do I stop office 2007 fro unistalling the earlier edition of office 2000
or 2003?

Install Office from the oldest to the newest, selecting a custom installation for each. Then select to keep prior versions.
