If I advance from Office 2000 to Office Home and Student 2007 on 3 computers
at home, do I have to separately purchase Outlook, which is not in Office
Home and Student 2007, or will the Outlook in 2000 still work?

Outlook 2000 will still work but you will lose the Office automation functions such as mail merge and send to from Office applications.
