Office Outlook 2007 License Question

I purchased Office Outlook 2007 a couple years ago and I installed it
once and uninstalled it and haven't used it since. (I found the minor things
I need to track for myself can be done with Access 2007.)

Can I resell the product?
Will I be violating any license agreement?

From Office 2007 Standard EULA:
TRANSFER TO A THIRD PARTY. The first user of the software may make a
one-time transfer of the software, and this agreement, directly to a third
party. The first user must uninstall the software before transferring it
separately from the device. The first user may not retain any copies.
Before any permitted transfer, the other party must agree that this
agreement applies to the transfer and use of the software. The transfer
must include the proof of license. If the software is an upgrade, any
transfer must also include all prior versions of the software.

A dated purchase receipt is one. I believe a Certificate of Authenticity and
a product key would work, but I'm not positive of that.

Hell, i don't have the reciept anymore. At least I don't believe i do.
It's in in the original box with the product key sticker.

You don't have any way to sell this, then, since you cannot convey to the new
owner the information s/he would need to install it.

Yes, with the Product Key but you said:

This implies that you don't have the product key any more. If you don't have
the original documents that came with the product, your purchaser has no good
way to prove the purchase provenance in case there's an activation issue.
Just as you can't sell a car properly without the title, so, too, you can't
sell Office without the equivalent of the title and protect the interests of
the purchaser.
