One of my .pst files is completely empty; where did the emails go

Could they be on a holiday?

If you can't find your mail you should restore from backup.

Do not recall "doing" anything. I just needed to see an old email in one of
the subfolders of the particular .pst file and it wasn't there. When I
checked all of the other subfolders in that same file they were also all
empty. I have 3 other .pst files which are fine.

How old were these items? Do you have AutoArchive enabled and could they be
moved by that?
