If you are connected to an Exchange server, enable the Out of Office
Assistant under the Tools menu. If you aren't connected to Exchange, you'll
need to create a rule to do it and leave Outlook running while you're gone.

If you don't connect to an Exchange server, there is no automatic out of
office autoreply. You'd have to spoof it with rules, and note that this
means leaving Outlook open, and connected to the internet, for the duration
of your absence.

Or check with your ISP to see if they offer this feature, which you could
turn on/off via webmail - some do. I know Earthlink does.
