Is it possible to set a rule _excluding_ certain email addresses or domains
from receiving a response when Out of Office is on?

Not within Outlook. You can control this on the Exchange server itself on
the SMTP conector.

Thanks for the swift response.

I loosely understand how to deny certain email addresses and domains by
setting the permissions at the connectors but, in this case, I do want to
receive the messages - just not have the auto response sent. Is that possible
to set at the connectors too?

I curently do not have an Exchange server by hand and I don't know the exact
steps by heart. You might want to ask this again in an Exchange newsgroup so
you'll get a faster responds. Don't forget to mention you Exchange version.
