outline setting changing upon document open

I am using Word 2007 in Compatibility Mode. I have a document organized by
numbered headers and have an table of contents created from those headers.
The headers themselves have proper outline settings (e.g., level 1, level 2,
etc) and show up properly in the table of contents. However, when I close and
re-open the document I get a few "stray" pieces of body text that
(automatically) change from "Body Text" to "Level 1". This results in the
problem text showing up in the table of contents. I have tried to re-set the
problem text to Body Text and re-create the table of contents. All works fine
until I close and open the document again and they revert back to Level1. I
have also tried to cut and paste the text and surrounding text using "paste
unformatted text" but without solving the problem.

I am using the document map but "Define styles based on my formating" is
disabled.

The document map is indeed the issue, when I have it turned off upon opening
the document it does not update my table of contents. For a permanent fix I
deleted the \u switch from the table of contents. Strange behavior for the
document map to alter the table of contents!

It's not that way around...

The DocMap actually executes AutoFormat in that when opened, it goes through
the document looking for Headings and what it thinks are headings even if
not formatted as such. It then formats these unformatted areas as headings
as it thinks appropriate. So the ToC sees these new headings and updates
itself. So it isn't the ToC that is at fault but the DocMap: the ToC is just
doing its job correctly.

What you need to do is to make sure that the sections that keep getting
AutoFormatted to Headings are correctly formatted with a style other than
normal style so that the DocMap doesn't misinterpret them as headings.

So, an intent of the DocMap is to try and interpret what I "actually" mean
when I apply styles? And, if I use a style other than normal then DocMap will
know that it is not meant to be a heading? Interesting to say the least...

Seeing as how Document Map is listed under *Views* it seems reasonable for
someone to think it simply is showing something, not updating your document.
I'd call that a bug with DocMap on some level, at the very least because it
does not make it obvious that it is changing your document or seem to give
you an option to turn it off.

You are not the only one to be surprised. We (the MVPs) had always been
aware of the problems with DocMap changing levels and styles, so when we had
the opportunity to talk to the developers, we were surprised by the
revelation and the developers were equally surprised that we didn't know.

The answer is to make sure that anything formatted as normal does not have
direct formatting that may inadvertently look like a heading or DocMap will
make it a heading.

Can you tell me what the \u switch from the table of contents is and how to delete it? Thanks

Once the Document Map has created the problem, just hiding it won't correct
the problem.
