Outlook 2002: Can I colour code emails that have been printed?

Only manually as Outlook doesn't keep track of what was printed and what
not.

Thanks for the response. Would it be possible to use conditional formatting
with Categories somehow (i.e. create a "Printed" category which could be used
to mark such emails), then apply a format those that are assigned that
category? I've had a quick look, but...

Yes, but you must manually assign it the Category. Then of course you can
define a view that only shows messages with the "Printed" category. If you
know some VBA you can automate this by a click of a button. You might even
be able to define your own printing button which automatically adds the
"Printed" category. Check with the developers in outlook.program_vba if you
need assistance with that or take a look at www.outlookcode.com
