Outlook 2007 font changing from default setting

When composing message in Outlook 2007 the font changes from the default
setting...sometimes the color changes or the font size is larger or smaller
despite the default setting under 'stationery and fonts'...

Also...the default setting for 'composing and reading plain text messages'
will not save as selected...each time I go in to check it...the color has
reverted back to a light yellow...will not hold its default setting either...
