I want to convert back from Microsoft Outlook 2007 to Microsoft Outlook

No. Afraid you will need to uninstall OL 2007 and then install OL 2003

What I meant is can I backup my *.pst files from 2007 and then restore those
filles to 2003.

Yes, that you can do. They will not work in Outlook 2002 and older
because of a format change.
