Outlook 2007

We are going to be migrating from Lotus Notes to Outlook (Exchange).
The users machines will have Outlook 2007 but continue using Office in
2003 ie. Word, Excel, and PowerPoint. My question is - What kind of
issues will we run into with this?

You will lose the ability to perform mail merges. You may lose spell
checking. There may be other features lost as well, but I can't think of
them off-hand.
