while this answer may reach you too late, i think it is worth to
clarify something.
i don't use outlook express myself, but those names are stored
somewhere, otherwise, they wouldn't be auto populating, right?
just to give you an example, in outlook 2003, under the profile folder
located in c:\documents and settings\yourusername\application
data\microsoft\outlook, there is a file called \"default outlook
profile.nk2\"
the .nk2 file have the list of these names.

So, Outlook Express should have a file with these names somewhere...

Now, since you switch to Outlook already, I would advise you that every
single time you do a backup, to remember this NK2 file and to back it up
also.

Once you copy the old NK2 file over the new one (over the empty one),
as DL outlined, in Outlook you click on the Menu Bar in Tools, a submenu
will pop up, choose Options in the bottom, a window will open: Click the
Preferences Tab, under E-Mail Options click the button \"Advanced E-mail
Options\", another sub-window will pop up: Now tick the box preceding
\"Suggest names while completing...\"
Now click OK in all sub-windows.
Restart Outlook (close it and re-launch it) and it should be working
fine.
