Outlook back up of contacts and e-mail is non existant / impossibl

There needs to be a simple way in Outlook to backup all e-mails (sent,
received etc) as well as calendar and contacts.

There is, just check out the MS Outlook site for a free backup addin.
Or with OL closed simply copy the pst file(s)
Or use your backup software, you do backup dont you?

Doesn't anybody backup their important files anymore?

Simply copy your .pst file - it has everything that you need to get back up and running. Now, that wasn't hard, was it?
