I checked her options the time zone is correct, the time zone patch ha

Is a mobile device connected which syncs with Outlook?

Can you reproduce this in Outlook Safe Mode?
Start-> Run; outlook.exe /safe
(note the space in the command)

Is the mobile device disconnected from Outlook at the time of trying?
When you reset your view, does it still happen then?
View-> Current View-> Customize Current View...-> button Reset Current View

If she is using BES, it shouldn't be connected to outlook at all. It's
OTA sync. Connection to the desktop is only needed to sync files, music
etc and can be done without desktop manager.

Is it always 3 days behind? Or always 5/31 (its probably her firs
date in the monthly calendar so that makes sense).

If she uses another view, does this happen

duplicate this with 5 other people.

UPDATE:11:43 am EST
We had her install fresh new outlook profile.

we belive we have found a bug

reson,
Outlook 2007
we click on month view and todays date is highlited we click new it
defaults to todays date
we click on week and day same thing defualts to today.

We then go back and clik on month and it shows may 31
we then go back and click on week and hit new... BAM it shows May
31...
we then try day, and hit new and that too goes back to may 31....
