Outlook Calendar on Server

Can I, and if so how, separate the calendar function from the email (which
is on my local drive) so that it is on my LAN's server drive and thus make it
accessible to others on my network.

Only approximately. Make the Exchange mailbox your delivery location and
then create a rule to move each incoming message to the PST. In other
words, keep everything BUT mail on the server.
