Outlook Closes When Full Screen Email is Closed

When I double-click an email in the inbox, it opens full-screen on top of
Outlook itself. But when I click the 'X' in the upper right hand corner of
the email, the email closes AND so does Outlook itself. One solution is to
minimize the email so the 'X' marks do not overlap.

Is this a problem with Outlook, or is there some setting for my mouse that
causes it to perform the same action on two different layers?

It's either you or your mouse causing the problem. First thought is that you
are clicking twice - I've done it more than once when the window don't
respond fast enough and I click again (thinking I didn't click on the x
before). Oops... patience really is a virtue. :)
