Outlook keeps deleting stuff

How can I stop Outlook from automatically deleting old tasks / calender
items?

I like to know what I've done and now can't remember as it seems to have
deleted past appointments and tasks!!!

You probably have AutoArchive configured. To turn it of;
Tools-> Options-> tab Other-> button AutoArchive...
