Outlook keeps reverting back to old incorrect server

We have roaming profiles here. Every once in a while users won't be able to
open their Outlook, because the server name in their profile has reset back
to the old Exchange servers name, rather than the server they are currently
on. I'm guessing this name must be floating around somewhere in the
registry, or in a file in their profile, but I don't know where. I don't
think there's anything hidden in their Active Directory account.
Anybody have any ideas where I can look? The problem creeps up from time to
time, so its something consistent, just not sure where.
I know it's not from a group policy, as i've looked through all of those.

If the profiles are truly roaming, the profile is getting the old server
data from the network. The exchange guys would know all the places it could
be 'hiding' -
