Outlook profiles: How to keep them

Hello,

I run Windows 2K server with WinXP on 2 desktops on a home network. I am
also studying for several MS certifications. I sometimes need to re-install
the server or AD on the server. Whenever I do this, I lose everything in
Outlook on the desktops. I'm not sure, but I think everything in Outlook is
stored somewhere under each users folder in C:\documents and settings on the
desktop. Is there anyway I can keep this information intact if I need to
reinstall the server or AD?

Can I use group policies so that everything in the documents and settings
folder is kept on the server and will always be there? Any other
suggestions?
