Outlook reply address

We are moving from Outlook 2000 with POP accounts to Outlook 2003 using an
Exchange Server. In Outlook 2000, ae set up reply address by creating and
account and unchecking the box that says to use that account when receiving
messages in the Properties of each account.

How do I do the same thing using Outlook 2003 with my mail being sent via
exchange?
