page numbering for a book

i'm making a book and wish to have page number on the outside bottom of every
page. e.e. bottom right on page 1 and all odd pages, bottom left for page 2
and all even pages. there don't seem to be these choices. is there a
different menu for books?

You mean like File > Page Setup > Booklet?
Or if you don't want to print in spreads, View > Two-page spread?

The booklet format is two pages for each sheet. Our page size is 8 1/2 x 11
for each page. The page # choice for wo page spread doesn't allow for outside
bottom. it's right only left only, center. It's a smart program, there must
be a way, no?

You go to the Master Page, and make sure you're using a two-page master
(instructions for how to do this vary between versions of Publisher, and you
have so far spectacularly failed to mention which you are using). Create a
left-aligned page number on the left-hand master and a right-aligned page
number on the right-hand master.

To have numbers centered on the outside covers, you will need to either use
a separate master for that page (Publisher 2003 only) or obscure the page
numbers coming from the master page and replace them manually.
