When the documents were scanned into Acrobat they are images. Either one
image or multiple images.
Some things to try.
First save the file to a different name or a different folder so what you do
does not destroy the original file.
If the documents are text documents, in Acrobat 8.1 try Document Menu, OCR
Text Recognition to use Acrobat Optical Character Reader to convert to text
from images. OCR process frequently requires some editing to correct
conversion errors.
In Acrobat File Menu, try Export to either a Word Document or image file
such as TIFF. If you choose a Word Document, may be able to separate with
Word. If you choose a image file, you may be able to separate with a good
image editor or with Microsoft Office Tools, Microsoft Document Imaging 2003
or 2007. Note: when you have a file with multiple images, some image
editors can only recognize the first image.
