PDF not matching up to what's on screen

All of a sudden, when I publish to PDF I can't see any white text on a black
background. This only started after I hit 100 pages in my publication. Any
help would be greatly appreciated.

White is overprinting (not sure how exactly, it's really hard to do)
or the PDF generating tool is messing up the text.
