For some reason my personal folders appear twice in the Folder Pane - how do
I remove one of them, without deleting it!

You have corrupted your mail profile, probably by copying a PST over the top
of an identically named PST. Create a new mail profile with Control
Panel>Mail>Show Profiles>New.

Sounds convincing - but what do I do after that, it gets a bit
hairy...

I should have said Mail applet>Show Profiles>Add (not New). Name the new
profile. Click OK. Select View or change existing e-mail accounts>Next.
At the bottom, click New Outlook Data File, select the type of PST your old
PST is, and click OK. Browse to your current PST, select it, and click OK.
Click OK again. Now you'll be back at the "E-mail accounts" dialogue.
Click Add and add in an account matching your current one. After that's
done, you'll be back at the E-mail accounts dialogue one more time. Click
Finish. Select the new profile at the bottom and click OK. Outlook should
now open with the proper number of Personal Folders files.

That did it - thanks!
Can I delete the other profile - or should I leave it there?

Had the same problem. Your answer worked like a charm!

Only problem... email accounts weren't transferred over to the new profile.
I'll check another thread for exporting email account information.

No, they don't get transferred. There is no way to export/import accounts.
Entering them again witht he Account wizard is the best way.
