Hello,

What is the difference, for a task, between "% complete" and "physical %
complete" ?

% Complete refers to duration, while % Physical Complete is calculate in
Project based on effort and used to drive Earned value calculations.

Think of it like this.

the task is to build a wall and is scheduled to take 8 hours.

4 hours is needed to go to the store and buy bricks and dig the foundations.
This is 50% complete (in terms of time) but as you have not layed a brick
it's physically less complete.

The remaining 4 hours are used to lay the bricks where the majority of the
physically complete % value is earned.
